Organic Butternut Squash Feta Soup

Organic Butternut Squash/Sweet Potatoe Feta Soup

Delicious and healthy butternut squash feta soup is a cheesy and veggie filled nourishing soup.
Ingredients:
1 16 oz. bag organic butternut squash (frozen or chopped and sauted)
1 block feta cheese
1 bag frozen organic sweet potatoe(optional; you can use all butternut squash but I added sweet potatoe to enhance flavor)
3 cloves garlic
2 tsp French grey salt
32 oz chicken bone broth
2 tsp. dried sage or fresh
Several grindings fresh cracked pepper
Avocado oil spray for pan
Crumbled bacon for topping
Instructions: I love to save time, so I used my sauté pan on the stove top. I sautéed squash and sweet potato, along with garlic all together in olive oil in the pan. I love to add my grey salt right away, so it starts to infuse into the vegetables. Once vegetable/garlic mix is browned I put them into my Vitamix blender. I then added to the vegetables in Vitamix: broth, herbs, feta, fresh pepper. Blend until it becomes a smooth creamy consistency and keeping it in Vitamix longer which actually heats the soup back up. Pour into beautiful soup crocks and sprinkle with bacon bits or your own crumbled bacon. Perfect with some homemade Einkorn bread.
